What’s Been on My Plate Lately

   

Food has a way of telling you where your head is at. Not in a dramatic way, but in a reflective manner. What we crave can be telling of who we are. It is true that “we are what we eat”.

The one meal I’ve been making lately is boiled yam with kontomire stew. Kontomire is a Ghanaian stew made from cocoyam (taro) leaves, palm oil, and melon seeds. It is deeply familiar to me. The kind of meal that doesn’t just fill me up but makes the day a little better. Pure comfort. I also just got back from Ghana and brought back plantain chips and cerelac. Yes, I know it’s baby food…. but mixed with sesame seeds it’s a comforting breakfast.

Other meals that have been in weekly rotation include spicy ramen with soft-boiled eggs, fresh tomatoes and green onions. I have been loving fufu and groundnut soup. I like it spicy, and it one of those meals that is as good as it sounds. I made beef casserole for the first time recently and it was so good it automatically became a weekly thing. I’ve also been doing air-fried plantains with avocado and tofu a lot. I’m slowly trying to eat less meat and this has been my go-to. It helps that I just really love plantains.

What I notice, looking at this list, is that most of what I’ve been drawn to lately is rooted in my memories of home.
